Chili Pepper

Here at Olam, our chili peppers are grown in the southwestern United States — primarily in New Mexico, Texas and Arizona. We’ve bred our proprietary chili pepper varieties to reach desired color, flavor and heat attributes, as well as to facilitate easier machine harvesting. 

Within hours of being harvested, the chilies are driven to our processing facility in Las Cruces, New Mexico for washing, cleaning and drying. During this first step chili peppers are ground into Work In Process (WIP) material then packed in Modified Atmosphere Packaging (MAP) and are kept in cold storage to ensure quality. 

To produce the final product, Olam blends batches of the WIP chili peppers to maintain a consistent color, flavor and heat for every batch. With our in-house steam treatment capability we can assure the freshest, clean label chili pepper.

So, when can I use chili peppers? Chili peppers have many applications, including: 

  • To add a bright splash of color to food
  • Great in spicy Chinese or Korean sauces
  • As an addition to snack foods, to introduce a flaming hot flavor

Chili Pepper

Chili peppers are perennial shrubs belonging to the Capsicum family. They are native to South America and belong to the nightshade family, Solanaceae. The earliest traces of the plant date back over 6,000 years, long before Christopher Columbus discovered it in 1493 and introduced it to the rest of the world. 

The pepper earned its name from Columbus mistaking the chili pepper for black peppercorns, considered “black gold” at the time, due to its value as a commodity. He first introduced the spice to Spain, from there it spread into the rest of Europe and Portugal, eventually making its way into India in 1498 via Portuguese explorer Vasco-da-Gama.
