Onion Facts

Onion FAQ

  • How is onion powder made? Onion powder is seasoning made from dehydrated, ground-up onions. As onions are dried, they lose their bulky water weight but maintain their potent onion flavor. The process is relatively simple; Onions are dehydrated in large industrial dryers (at ofi only the best US Grown Onions make the cut), and then travel through a series of cutting machines that gradually breaks down the onion into the many sizes available. These include large chopped, small chopped, minced, granulated, and the smallest fraction is Onion Powder.
  • What is onion powder used for? Onion powder is one of the most popular seasonings in America. It is used to flavor and enrich anything that onions might be added to, with all the concentrated taste but none of the bulky water weight. It is most commonly used in dry rubs, pre-mixed seasonings, marinades, soups, and all sorts of other dishes that require small volumes of concentrated onion flavoring.
  • How much onion powder equals one onion? Typically speaking, 1 onion is 3 parts water to 1 part "onion". That means you’d need 3x as much raw onion to equal the potency and flavor concentrations present in onion powder. So, about 25% of a full onion in powder form = one full onion.
  • How do you keep onion powder from clumping?
You can prevent clumping by storing it properly in a dry area when it’s not in use. Keep it sealed, away from moisture and humidity, and you’ll be able to preserve that fine flour like consistency.
  • How do you soften onion powder? If for some reason you do find your onion powder clumping, you can simply break it up again and it will be fine! Pour it onto a shallow plate or bowl and use a fine fork to break up the clumps to the consistency you desire.
  • What is the difference between chopped onion and diced onion? The size of the onion flakes! Chopped onion is "looser". Because onion layers aren’t uniform, when the onion is put through the cutting machine the chopped onions can have variety in their size and dimensions. Diced are more uniform and are specially sorted to improve uniformity in piece sizes.
  • How long does chopped onion last? Assuming proper storage, about one year on the shelf after purchase.
  • How many cups is one chopped onion? Depends on the size of the onion! For dehydrated onion, it is about 25% of the total weight of the onion.
  • How much chopped onion equals one onion? Same principle as above! Depends on the size of the onion. Typically one large onion is 8-12 oz, so about 2 – 4 oz of dehydrated chopped onion.
  • How do you store chopped onion? Typically you seal it in a container away from ambient air to prevent moisture from getting in the container, which can cause clumping. Putting it in a spice jar in your spice cabinet is just fine!

Origin

Many archaeologists, botanists and food historians believe onions originated in either Central Asia or Iran and West Pakistan. Most researchers agree the onion has been cultivated for over 5,000 years.

History of Onion

For over 5,500 years, onions have been a primary vegetable all over the world. Originating in central Asia, scientists believe the onion was domesticated by Babylonians in central Asia, the Middle East, and countries like Iran and West Pakistan. As soon as organized onion cultivation started, many civilizations became dependent on the flavorful, durable, and easy-to-grow onion.

As the cultivation of onions spread to the four corners of the globe, it has been widely grown in many different soil types and regions throughout the world. In fact, according to some records, onions were the first vegetable ever to be planted in North America by the colonists.

Where is onion cultivated?

Among the most widely cultivated species of Allium, onions are produced in 170 countries around the world for domestic use or trade. Every year 9.2 million acres are harvested around the world. Much of this general production is done in the U.S., China and India, which are the three primary sources for the world’s onion.

Here at ofi, we source all of our onions from three growing regions in the western United States, the San Joaquin Valley, Imperial Valley and Tulelake.
